History and Origins

Humans have been baking for an extremely long time; we're talking 30,000 BCE, if not earlier. As soon as cavemen found their flame, they started cooking, and thus baking. Just imagine the scene - "Ay yo, Unga, why are you putting the food into the fire?!" "Let him cook, bro." "But- " "LET. HIM. COOK!" 🔥 And cook they did. Archaeologists roughly date the first evidences of ground grains being cooked into primitive flatbreads around that time period. 

Things took off pretty quickly from there, and logically so - hunter-gatherer societies were revolutionized with the spread of this new invention. Portable food that took a while to go bad sounds like such a simple thing to us these days, all but taken for granted, but for these guys, it was, quite literally, everything. Suddenly, nomad tribes didn't have to hunt in the middle of a move anymore, which enabled them to spread out like crazy. Archaeological finds from this era began to show a much wider diversity of creative materials, evidence of trade, and so much more - all enabled by what was essentially a prehistoric Hot Pocket. 🥪

Fast forward to about 10,000 BCE, humans started farming, and domesticated grains. This meant they didn't need to gather anymore, and could produce mass quantities of goods like bread. This also meant more experimentation with how that stuff got made. Technological growth took front and center stage from here, and things started booming - literally! We got blast ovens, diverse cooking methods, plant crossbreeding, and more from this era, eventually leading into the art of baking as we know it in modernity. 

When yeast entered the picture, the whole game changed overnight. This happened in Mesopotamia, right around 6,000 BCE, and once it spread to Egypt, well, the Egyptians did what they do best; go big or go home. Not only did they start making things like beer, but the variety of their baking methods took off, big time. 

The Greeks and Romans decided that the Egyptian way of doing things just wasn't it. They had to go bigger. So what did they do? They started building wood-fired, enclosed ovens. Baker's guilds, incredible new recipes, and even laws built around the creation and trading of bread were just the tip of the iceberg.
