Did you know limes, which are often paired with lemons in refreshing drinks, aren't naturally green? The Persian lime, which is one of the more common types, actually turns yellow when it's ripe. But as they are often grown along with lemons, limes are picked a bit early, while they're still green, to keep from mixing them up. But in more tropical climates, where limes grow natively, they remain green even when ripe due to a lack of cool whether, which affects their skin color as they develop.
